Marinated Spiced Carrots

Ingredients
- 1 lb small carrots
- 1/2 c white sugar
- 1/4 c white vinegar
- 1/2 c water
- 1 T mustard seeds
- 3 whole cloves
- 1 3 inch cinnamon stick

Preparation
Step 1
1. Cut carrots into 3 inch long match sticks.
2. Blanch in boiling water for 3 minutes.
3. Plunge into cold water.
4. Drain.
5. In saucepan, combine sugar, vinegar, water, seeds, cloves and cinnamon stick (broken in 1/2).
6. Bring to boil. Simmer 10 minutes.
7. Pour over carrots.
8. Let cool. Cover and refrigerate at least 8 hours or overnight.
9. Drain well.
10. Discard cinnamon stick and cloves.
11. Enjoy.
