Ingredients

  • 1 4-6 lb chicken, skinned or not
  • 1 tsp. kosher salt
  • 1 tsp. paprika
  • 1 tsp. onion powder
  • 1/2 tsp. dried thyme
  • 1 tsp. Italian seasoning
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. black pepper
  • 1 lg onion quartered
  • 4 garlic cloves

Step 1

Use a 6 qt slow cooker. Combine spice mixture and rub all over chicken, inside and out. Stuff onion and garlic into the cavity, and place in cooker breast side up. Do not add water

Cover and cook on low for 8 hours, or high for 4-5 hours until no longer pink, and meat thermometer registers 160°.
