Ingredients

  • Topping:
  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground nutmeg (optional)
  • 1/4 tsp salt
  • 1 to 1 1/2 cups fresh or frozen
  • cranberries
  • 1/3 cup packed brown sugar
  • 2 tbsp all-purpose flour
  • 1/8 tsp ground cinnamon
  • 1 tbsp butter

Preparation

Step 1

In a mixing bowl, cream butter and sugar. Add eggs and vanilla; mix well. Fold in sour cream.
Combine flour, baking powder, baking soda, nutmeg and salt; stir into the creamed mixture just until moistened. Fold in cranberries.
Fill greased or paper-lined muffin cups two-thirds full.

For topping, in a small bowl, mix together brown sugar, flour and cinnamon (a fork works best to cut butter into dry ingredients). Sprinkle topping over muffins.

In a pre-heated oven, bake at 400 F for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Cool in pan 10 minutes; remove to a wire rack
