  • Marinade:

  • 2 cups of buttermilk
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 1 tsp cayenne pepper
  • Seasoned Flour:
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper

Preparation

Step 1

Rinse chicken and pat dry.

For the marinade: Toss together chicken, black pepper, salt and cayenne pepper in a large bowl. Pour buttermilk oven chicken until coated. Refrigerate for at least 6 hour or overnight.

For the seasoned flour: In a separate bowl combine the flour, baking powder, garlic powder, paprika, salt and pepper.

Remove chicken one piece at a time from the buttermilk and dredge in flour mixture. Shake off excess flour and transfer to a plate. Arrange in one layer in fryer basket with the skin side up and spray with oil. Cook at 370 degrees for 20 minutes. Pull out basket and turn chicken over and spray the other side. Bake for 10 more minutes.

Note: I cooked the chicken in the Todd English 1500 watt air fryer. You may have to adjust cooking time.
