  • 1 cup white sugar
  • 1/3 cup water
  • 1/8 tsp. cream of tarter
  • 1/2 tsp. salt
  • 2 egg whites
  • 1 tsp. vanilla

Step 1

Mix sugar, water, cream of tarter and salt in heavy pan. boil without stirring until mixture reaches 240 degrees on candy thermometer. Beat egg whites in a metal or high-temp glass bowl, until stiff peaks form. Begin to pour the sugar/water mixture in a slow, thin stream into the beaten egg whites, beating constantly until thick enough to spread. Stir in vanilla. Makes about 2 cups of frosting.
