Ingredients
- 6 medium tomatoes, rinsed, quartered
- 1 medium Vidalia onion, sliced
- 1 green pepper, cut into strips
- 1 large cucumber, peeled and sliced
- 3/4 cups apple cider vinegar
- 1/4 cup water
- 3 Tbsp. sugar
- 1/2 tsp. salt
- 1/4 tsp. cayenne pepper
- 1/8 tsp. black pepper
- 1 1/2-tsp. mustard seeds
- 1 tsp. celery seeds
Preparation
Step 1
Place veggies in a large bowl. Combine the remaining spices and seasonings, along with the sugar, vinegar and water, in a small saucepan. Heat until boiling and then pour over the
vegetables. Stir around gently and then set to chill (in a covered dish) in the refrigerator. Serve chilled
with a slotted spoon.
