Moroccan Beef Tajine with Apricot and Pear

Ingredients
- 2 tsp butter
- 2 large onions (chopped)
- 4 tsp fresh ginger root (shredded)
- 2 tsp salt
- freshly ground pepper (to taste)
- 1/2 tsp ground turmeric
- 2 cinnamon sticks
- 4 cloves of garlic
- 2 tsp garlic (minced)
- 2 lb lean stewing beef (cubed)
- 10 fl oz beef broth (one can)
- 2 pears (sliced)
- 1 cup dried apricots
- 2 tbsp slivered almonds (toasted)
- 2 tbsp fresh cilantro
- lime wedges

Preparation:
-Add butter to a preheated pan and saute onion, ginger, salt, pepper, turmeric and cinnamon sticks until glazed
-Add garlic and beef, saute until beef turns brown (about 5 minutes)
-Add beef broth and bring to a boil
-Divide the contents of the saute pan between the two tajines (careful not to overfill)
Cook:
-Cover the tajine and cook at 325 F for 1 hr
-Remove the tajines and divide the pear slices and apricots evenly between the two tajines
-Cook for another 30 mins (or until the pears are tender and the beef is cooked throughout)
-Remove the tajines and garnish with slivered almonds and cilantro, top with lime wedges if desired
