Ingredients

  • 16 oz orzo pasta
  • 12 oz cooked chicken breast
  • 2 tbsp olive oil
  • 1 carrot, sliced
  • 1 onion, diced
  • 1 tbsp prepared minced garlic
  • 1 can peas
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups heavy cream
  • Salt & pepper
  • 8 oz crumbled goat cheese

Preparation

Step 1

Cook the pasta according to package directions.

Heat the olive oil and cook the carrot, onion and garlic until tender. Add the peas. Add butter to the vegetables followed by the flour. Stir until the butter and flour is combined, 1-2 minutes. Add the heavy cream and whisk until thickened. Season with salt and pepper.

Add the cream mixture to the orzo and stir to coat. Warm up the chicken in the microwave and add to the pasta. Stir in the goat cheese and serve with garlic bread.
