Ingredients
- 2 tablespoons butter
- 1/2 cup diced carrots
- 1/2 cup diced turnip
- 1/4 cup diced potato
- 1/2 cup chopped leeks
- 1/2 cup diced onion
- 3 cups beef broth
- salt and pepper
- 1/2 cup heavy cream
- 2 teaspoons chopped fresh parsley

Preparation
Step 1
Melt butter and cook veggies without browning for 5 minutes. Add stock, salt and pepper. Bring to boil. Simmer on low 30 minutes. Run through blender. Pour in cream Garnish with parsley.
