Ingredients
- Spicy Coleslaw:
- 2 to 3 TBS olive oil
- short ribs
- salt and pepper
- 1 onion chopped
- 1 cup red wine
- 1/4 cup balsamic vinegar
- 4 cups beef stock
- 14 oz stewed tomatoes
- 2 whole thyme sprigs
- 1 whole rosemary sprig
- 2 TBS sour cream
- 3/4 cup mayo
- 2 TBS vinegar
- dash tabasco
- pinch cayanne pepper
- dash celery seed
- salt and pepper
- coleslaw mix
- diced green onion
- jalapeno diced

Preparation
Step 1
Brown ribs in hot dutch oven with olive oil salt and pepper. Remove meat and set aside.
Add onion, wine and vinegar to above dutch oven, reduce 1/2.
Add beef stock, tomatoes, thyme and rosemary to above. Put back ribs in dutch oven cover with foil and lid. Cook at 375 degrees for 90 minutes.
Cool slightly, remove bone and membrane. Shred meat.
Coleslaw:
Mix all ingredients and chill.
