Seared Ahi with Blackened Rub and Soy-Mustard Sauce

Ingredients
- Soy-Mustard Sauce:
- 1 - 3 tuna staks (~ 1 1/2 lbs total)
- 2 tbsp mustard powder
- 1 tbsp hot water
- 2 tbsp unseasoned rice vinegar
- 2 tbsp soy sauce
- Blackened Rub:
- 2 tbsp blackening spice
- 2 1/4 tsp paprika
- 3/4 tsp cayenne powder
- 3/4 tsp red chili powder
- 1/8 tsp ground white pepper

Preparation
Step 1
Soy-Mustard Sauce:
1. Mix the mustard powder and hot water to form a paste. Let sit for a few minutes.
2. Add vinegar and soy sauce. Mix together.
3. Strain.
4. Chill.
Blackened Rub:
1. Mix all ingredients together.
Cooking:
1. Rinse the tuna steak(s) and dry completely with a paper towel.
2. Dredge the tuna on all sides with the blackened rub.
3. Heat a lightly oiled cast iron skillet and sear the tuna over high heat to desired tenderness (about 15 seconds per side).
4. Serve with soy-mustard sauce.
