Ingredients
- 2 1/2 quarts water
- 2 1/2 tsp salt
- 3 pounds chicken parts
- 1 1/2 cups sliced celery
- 1 1/2 cups sliced carrots
- 1/2 cup chopped onion
- 1 tsp dried thyme
- 1 bay leaf
- 1/4 tsp pepper
- 1 pound fresh mushrooms
- 3/4 cup Bob's Red Mill Pearl Barley

Step 1
In a large saucepan combine water, chicken, salt, celery, carrots, onion, thyme, bay leaf, and pepper. Bring to boil. Reduce heat and simmer, covered until chicken is tender (approx. 1 hour). Meanwhile, slice mushrooms and set aside. Remove chicken from broth and take meat off of the bones, cut into cubes. Return chicken to saucepan and add barley and mushrooms. Simmer, covered until barley is tender, about 50 minutes.
