Ingredients

  • 1 cup cooking oil
  • 1 1/2 cups white sugar
  • 4 eggs
  • 3 cups grated carrot
  • 2 cups all purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 3/4 cup walnuts

Preparation

Step 1

Preheat oven to 350. Beat cooking oil and sugar together in mixing bowl. Beat in eggs 1 at a time. Stir in carrot.

Add remaining ingredients. Fold in to moisten. Spread in greased 9 x 13" pan. Bake in oven until an inserted toothpick comes out clean., about 45 minutes. Spread with cream cheese icing when cool.
