Ingredients
- 1 tablespoon vegetable oil
- 12 ounces sliced pastrami or smoked meat, cut in strips
- 2 tablespoons packed brown sugar
- 1/3 cup cider vinegar
- 1 tablespoon dijon mustard
- 1/4 teaspoon each salt and pepper
- 454 grams package coleslaw mix
- 6 slices rye bread
- 6 slices swiss cheese

Step 1
Preheat broiler with rack 6-inches from element.
Heat oil in a large skillet over medium-high heat. Add pastrami and cook, stirring for 2 minutes. Stir in sugar, vinegar, mustard, salt and pepper until sugar is dissolved. Stir in coleslaw mix until coated. Reduce heat to medium and cook, uncovered, stirring often, for 10 minutes or until vegetables are tender and most of liquid is evaporated.
Meanwhile, place bread slices on foil-lined baking sheet under preheated broiler for 1 to 2 minutes on each side or until toasted.
Spoon vegetable mixture onto each slice of bread and top with cheese slice. Place under broiler until cheese is melted.
