Polynesian Meatballs

Ingredients
- 1 egg, beaten
- 2 tablespoons snipped fresh cilantro or parsley
- 2 cloves garlic, minced
- 1/8 teaspoon cayenne pepper
- 1 pound lean ground beef
- 1/2 cup ground peanuts
- 1 10-ounce bottle sweet-and-sour-sauce
- 2 teaspoons grated fresh ginger
- 1/2 teaspoon toasted sesame oil, optional
- 1 small fresh pineapple, cut into bite-sized pieces, or 1, 20-ounce can pineapple chunks, drained

Step 1
Preheat oven to 350. In a large bowl, combine egg, cilantro, garlic, cayenne pepper and 1/4 tsp salt. Mix in beef and peanuts. Shape into 36 meatballs. Place in a 15x10x1-inch baking pan. Bake about 20 minutes or until done. Remove from oven; drain on paper towels.
Meanwhile, stir together sweet-and-sour sauce, ginger, and sesame oil; set aside. Thread a pineapple piece and a meatball onto a small skewer or wooden toothpick. Return to the baking pan. Repeat with remaining pineapple and meatballs. Brush with the sweet-and-sour sauce mixture. Bake for 5 to 8 minutes more or until heated through.
In a small saucepan, heat remaining sauce until bubbly. Brush meatballs and pineapple with additional sauce just before serving. Serve sauce with meatballs.
