Ingredients

  • 1 pound frozen Brussels sprouts
  • 2 ounces bacon, cut into 1/2-inch pieces
  • 2 tbsp olive oil
  • 2 tsp lemon juice
  • 1 1/2 tsp Dijon mustard
  • 1 tsp honey
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Step 1

1.To make the vinaigrette, in a small bowl, mix the 1 ½ tablespoons of olive oil, lemon juice, mustard and honey. Add the salt, black pepper and garlic and mix to combine. Set aside.
2.Bring a large pot of salted water to a boil. Add the Brussels sprouts and cook them for 10-12 minutes. Drain well and set aside.
3.Heat ½ tbsp of olive oil in a large skillet over medium heat. Add bacon, and cook, stirring occasionally, until crisp, about 6-7 minutes.
4.Add the Brussels sprouts and toss to combine.
5.Remove the skillet from the heat, add the vinaigrette and toss to combine. Add more salt or pepper if necessary and serve immediately.
