Ingredients
- 3-4 ears of fresh corn (may be cooked or not) or 8 3/4 oz. canned corn
- 1 cup milk
- 1 1/2 cup flour
- 3 tsp. baking powder
- 3/4 tsp. salt
- 1 egg, beaten

Step 1
Cut corn off of cob to make 1 cup of cut corn. Measure dry ingredients. Combine egg, milk and corn. Add to dry ingredients. Mix until moistened. Drop batter by large spoon into deep hot fat (375 degrees). Fry until golden, turning over once. Drain on paperr towels. Serve with warm maple syrup.
You can substitute apples with cinnamon and sugar for the corn and have apple fritters.
Leftovers can be reheated in bake in toaster oven or in micro.
