Step 1
Method 1: Cover eggs in pan with cold water (2 inches). Add pinch of salt and dash of white vinegar. Bring to boil; Turn down heat to simmer 10-12 minutes for the perfect hard-boiled egg. Run cool water and let sit for 10-15 minutes. Peel under cold water.
Method 2: Bring water to boil, reduce heat to a bubble-less simmer, gently add eggs, and cook for 10-15 minutes. Lift out eggs and transfer to a bowl of ice and cold water. (Ice bath helps minimize the greenish cast to the yolk.)
Method 3: Put eggs in water; Bring to boil, cover, and then turn off heat completely. 5 minutes for soft boiled egg - runny yolk, soft white. 7 minutes for medium boiled - white fully cooked and some of the yolk possibly hardened. 9 minutes for firm but not quite dry yolk and white. 11 minutes - good for salads - may be a little chalky.
To make them easier to peel: use older eggs. Also, lightly cracking the shell before putting a hot egg in an ice water bath will also make it easy to peel
