Pasta with Sauteed Chicken and Snow Peas

Ingredients
- Sauce Ingredients:
- 12 ounces linguine
- 12 ounces chicken, cut into 1-inch cubes
- 2 teaspoons vegetable oil
- 1 1/2 cups snowpeas
- 1 1/2 cups thinly sliced red bell pepper
- 1 cup chicken stock
- 3 tablespoons soya sauce
- 3 tablespoons brown sugar or honey
- 1 tablespoon vegetable oil
- 1 tablespoon lemon or lime juice
- 2 teaspoons sesame oil
- 1 1/2 teaspoons minced ginger root
- 1 1/2 teaspoons minced garlic
- 2 1/2 teaspoons cornstarch

Preparation
Step 1
1. Make the sauce: In a small bowl combine stock, soya sauce, sugar, oil, lemon juice, sesame oil, garlic, ginger and cornstarch. Set aside.
2. Cook pasta in boiling water according to package directions. Drain and place in a serving bowl.
3. In a large non-stick skillet, heat the oil and saute chicken until no longer pink. Remove from pan and add to pasta.
4. To the hot skillet, add red peppers and snow peas and saute for 3 minutes, until crisp-tender. Add sauce and cook for 2 minutes, stirring constantly until slightly thickened. Pour over pasta and toss to coat.

"I don't know why this always reminds me of spring. I think because of the snow peas. This is the first meal I made for my husband and it is still one of his favourites, 10 years later.
"I make this all year long, and to make it frugal I use whatever veggies are in season and sometimes serve it over rice. I buy my fresh ginger and peel it and slice it and then freeze it and only take out the portion that I need. Got that tip from a professional chef. The sesame oil my seem like an added expense but since I make it all the time and keep it in the refridgerator it lasts a long time and it adds a special flavour to the dish."

This is a yummy chicken veggie stir fry! It's easy to make, and has a great flavor. I love pasta and chicken, and this is a great recipe! I know the photo shows broccoli instead of snow peas... because I haven't made it with snow peas yet. :) It was delicious with broccoli, though! :) My rating: 10/10.
