Ingredients
- Simple Syrup (makes 1-1/2 cups:
- 2 cups plain whole-milk yogurt
- 1 1/2 cups simple syrup (below)
- 1 teaspoon finely grated lime zest
- 3 tablespoons fresh lime juice
- 1/2 vanilla bean
- 1 cup sugar
- 1 cup water

Preparation
Step 1
Make Simple Syrup:
Combine sugar and 1 cup water in a jar, cover, and shake until sugar is dissolved.
Do Ahead: Simple syrup can be made 3 months ahead. Cover and keep chilled.
Make Sorbet:
Whisk yogurt, simple syrup, lime zest, lime juice, and ½ cup water in a medium bowl; scrape in seeds from vanilla bean. Process in an ice cream maker according to manufacturer’s instructions. Transfer to an airtight container; cover and freeze until firm, at least 2 hours.
Do Ahead: Sorbet can be made 2 weeks ahead. Keep frozen.
