Ingredients
- DIP:
- 2 large artichokes
- kosher salt
- 1-2 tablespoons olive oil (if grilling chokes)
- 1 small garlic clove
- 1 tablespoon minced shallot
- 1/4 cup mayonnaise
- 2 tablespoons greek yogurt
- 2 tablespoons (15 grams) shredded parmesan, romano or asiago cheese
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1/2 tablespoon dijon mustard
- dash of worchestershire
- small pinch of cayenne
- 2 tablespoons minced parsley
- kosher salt and fresh ground pepper

Step 1
ARTICHOKES:
Prepare artichokes as usual. If serving cold, cover and refrigerate until serving time, bringing to room temp before serving. If grilling, remove from fridge, brush with olive and sprinkle with salt and grill for a couple of minutes cut-side down, just to mark and heat through.
DIP:
Add everything except the parsley to the mini food processor and process until smooth. Add parsley and process again. Season with salt and pepper to taste and cover and refrigerate until serving time. Serve with the artichokes and lemon wedges, if desired.
