Potato Gnocchi with Classic Tomato Sauce

Ingredients
- 1 1/2 cups Classic Tomato Sauce (or 1 jar - 14 oz - pasta sauce)
- 1 large baking potato (8 oz)
- 1/2 tsp white pepper
- 1/4 tsp salt
- 1 egg, slightly beaten
- 1 to 1 1/2 cups all-purpose flour
- 4 qts water
- 1 Tbsp salt
- 1/4 cup freshly grated or shredded imported Parmesan

Step 1
1. Make classic tomato sauce
2. Heat potato and enough water to cover to boiling. Cover & boil about 30 minutes or until tender; drain and cool slightly.
3. Peel potato and mash in medium bowl until smooth; cool.
4. Stir white pepper, 1/4 tsp salt, egg and enough of the flour into mashed potato to make a stiff dough.
5. Knead dough on lightly floured surface about 6 minutes or until smooth & springy. Cover and let stand 5 minutes.
6. Cut dough in half. Roll each half into 12x1 inch rope on lightly floured surface.
7. Cut into 1" pieces. Shape each piece into oval-shaped balls. Cover and let stand 10 minutes.
8. Heat 4 qts water and 1 Tbsp salt to boiling in 6-8 qt saucepan. Add about half of the gnocchi. After gnocchi rise to surface, boil uncovered 4 minutes.
9. Remove with slotted spoon; drain. Repeat with remaining gnocchi.
10. Gently mis gnocchi, sauce, and 1/4 cup cheese. Sprinkle with additional Parmesan (optional).
