Ingredients
- Bread:
- 1/2 cup (1/4 pound) butter
- 1 cup water
- 1 tsp sugar
- 1/4 tsp salt
- 1 cup all-purpose flour
- 4 eggs
- Salad oil for deep frying
- Topping:
- 1/2 cup sugar
- 1 1/2 tsp cinnamon

Step 1
In 2 - 3 quart pan, melt butter over low heat. Add water, sugar and salt. Bring to rolling boil. Add flour all at once. Beat until mixture becomes smooth, thick paste that clings together and comes away from sides of pan. Remove from heat. Add eggs, 1 at a time. Beat well after each egg. Fill pastry bag, fitted with 1/2-inch fluted or star tip, with paste. Heat 1 to 1 1/2-inches oil in wok or deep pan. Heat to 400 F. Squeeze 4 - 8 inches, cut off. Cook 3 - 4 at a time, brown on both sides. Drain on paper towel. Sprinkle with mixture of sugar and cinnamon.
