Ingredients
- Carrot Cake:
- 1 1/2 cup corn oil
- 2 cups sugar
- 3 cups sifted flour
- 1 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 2 cups raw grated carrots
- 1 (8 1/2-ounce) can crushed pineapple with juice
- 1 1/2 cups chopped pecans
- 2 tsp vanilla
- 3 eggs
- Cream Cheese Icing:
- 1/2 cup butter
- 8 ounce cream cheese
- 1 pound powdered sugar
- 1/2 tsp vanilla
- 1 cup chopped pecans

Step 1
Mix oil and sugar. Sift dry together. Add 1/2 to oil mix. Add carrots, pineapple, nuts and vanilla. Add rest of dry, mix well. Add eggs, 1 at a time. Pour into buttered-floured 10-inch tube pan. Bake at 350 F for 1 1/2 hours. Leave in pan 10 minutes. Remove. Cool thoroughly.
Cream butter, cream cheese, powdered sugar and vanilla. Cream. Add chopped pecans. Spread on cake.
