Ingredients

  • 1 prepared 9-inch pie crust
  • 1 1/2 cups sugar
  • 1/3 cup plus 1 tbsp cornstarch
  • 1 1/2 cups water
  • 3 egg yolks, beaten
  • 3 tbsp butter
  • 2 tsp grated lemon peel
  • 1/2 cup lemon juice
  • 3 egg whites
  • 1/4 tsp cream of tartar
  • 6 tbsp sugar
  • 1/2 tsp vanilla

Preparation

Step 1

In saucepan, mix sugar, cornstarch. Gradually add water. Cook over medium heat, stir constantly until thick and boiling. Boil 1 minute. Add 1/2 hot mix to egg yolks, pour back into rest of hot mix. Remove from heat, add butter, lemon peel, lemon juice. Pour into baked pie shell. Cool.

Meringue: Beat 3 egg whites and 1/4 tsp cream of tartar until foamy. Beat in 6 tbsp sugar until stiff. Add 1/2 tsp vanilla. Cover lemon filling. Bake 400 F for 8 minutes.
