Brownie-Mousse Mini Cups

• 1 pkg. (19.9 oz.) brownie mix
• 1 egg
• 1 cup shredded zucchini
• 1/2 cup unsweetened applesauce
• 1 pkg. (1.4 oz.) sugar-free, fat-free instant
• chocolate pudding mix
• 1 1/2 cups fat-free milk
• 1/2 cup fat-free whipped topping

Step 1

Heat oven to 350°F. In bowl, combine first 4 ingredients and 1 Tbs. water; divide among 16 wells of cupcake pan. Bake 15 min. or until done. Let cool. In bowl, whisk pudding mix and milk. Stir in topping; pipe onto brownies.
