  • 1 medium potato
  • 2 T lard
  • 4 T sugar
  • 2 t salt
  • 3 3/4 C warm water
  • 3 yeast packets
  • 8 C flour plus more for kneading
  • Melted butter for brushing.

Step 1

Preheat oven to 400

Peel and cook potato real well in 1 C of water.

Run cooking water and potato through sieve into a large bowl.

Add lard sugar and salt and combine

In a separate bowl combine warm water and yeast and stir to dissolve.

Combine both water mixtures in large bowl and add flour until it becomes the consistency of bread dough about 8 C, may be more or less.

Place in a warm place to rise and double in size.

This can be done in loaf pans or as rolls.

Bake for 15 minutes or until golden brown. Remove from oven and brush with melted butter.
