Preparation

Step 1

Bring the meat to room temperature
Preheat over to 500
You can rub meat with garlic but do not salt
Place a meat thermometer into the thickest part.
Place meat on a rack in a shallow pan lined with foil
Place meat in oven and immediately reduce heat to 350
Cook to desired internal temperature (150-160 is med rare) which takes approx 1 hour
Remove from oven and tent with foil for about 10-15 min to retain juices before slicing.
