Grilled Shrimp Skewers with Spinach, Feta and Walnut Pesto

Ingredients
- Pesto Sauce:
- 1 lb large raw, peeled, and deveined shrimp
- 2 large cloves garlic, peeled and minced
- 2 t dried oregano
- pinch red pepper flakes
- 2-3 T olive oil
- 4 cups loosely packed spinach
- 1/2 cup crumbled feta
- 1/2 cup walnut halves (or 1/3 cup chopped walnuts)
- juice of 1/2 lemon
- 1 clove garlic
- olive oil as needed (approx 1/3 cup)

Preparation
Step 1
Toss shrimp with garlic, oregano, red pepper, and a few T olive oil.
Place bowl in fridge and marinate 30 min.
Pesto Sauce:
Into food processor, place spinach, feta, walnuts, garlic, and lemon juice.
Put on lid and turn on the processor.
Drizzle olive oil into the running processor as needed to create a smooth consistency.
Preheat grill and place shrimp onto skewers. cook 5-10 min.
Serve shrimp wile hot with steamed rice and a big dollop of pesto. Finish with a squeeze of lemon over top of everything.
