Egg SKillet
I make this in an electric skillet and it is a wonderful breakfast or dinner recipe. You can use grated hash browns or O'Brian Potatoes.

Ingredients
- Optional:
- 6 slices bacon, cut in 2-inch pieces
- 2-3 cups O'Brian or hash brown potatoes
- 1/2 cup shredded sharp cheddar cheese
- 6 eggs, lightly beaten
- salt and pepper, to taste
- 1 chooped tomato
- salsa and sour cream to serve with

Preparation
Step 1
In a large skillet, cook the bacon over moderate heat until crisp. Remove the bacon to drain. Pour off all but 2-3 tablespoons of drippings.
Heat the drippings remaining in the pan until sizzling. Add the bell pepper, onion and potatoes; cook, stirring gently, until the potato cubes are browned.
Beat eggs and pour over top. Crumble in bacon and cook on low, covered, for 10 minutes or until eggs are set. Sprinkle cheese and tomatoes over top. Serve.
