Ingredients

  • 1 cup buttermilk
  • 1 cup butter, softened
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup sweetened flaked coconut
  • 2 cups sugar
  • 4 large eggs,room temperature
  • 1/4 cup sour cream
  • 3 cups cake flour
  • 2 teaspoons vanilla
  • 1/2 teaspoon baking powder
  • 1/4 cup sugar

Preparation

Step 1

Preheat oven to 350. Sift together cake flour, salt, baking powder and soda. Set Aside.

In a large separate bowl, beat butter until very fluffy then add 2 cups of sugar. Continue to beat light and fluffy.
Beat in eggs one at a time. Mix in sour cream and extract. Blend in some of the dry ingredients followed by buttermilk. Do not over beat. Grease a bundt pan. add 1/4 cup sugar to the bottom of pan and the sides. Sprinkle coconut in bottom of pan. Add batter. Bake for 50 minutes to an hour. Drizzle glaze over cake.
