Ingredients

  • 1 Cup ginger
  • 1 Cup Raw Sugar
  • 1 lemon
  • 2 1/2 Cup water

Preparation

Step 1

Clean the ginger well, peel it and in a food processor chop it until it is very fine.

Add the finely chopped ginger, sugar, juice and zest of one and water to a pot and simmer for 15 minutes.

Allow mixture to steep overnight in refrigerator.

Bring the liquid back to stove and simmer for another 20-30 minutes until it has reduced by half and become a thick syrup.

Strain solids and store in airtight container.
