Ingredients
- Salad:
- 1 cup walnut halves
- 1 T butter
- 2 T honey
- 3/4 cup plus 2 T reduced-fat or regular mayonnaise
- 1 T plus 1 tsp lemon juice
- 1 tsp curry powder (optional)
- Salt and freshly ground black pepper, to taste
- 4 2/3 cup cooked, skinless chicken, thinly sliced
- 2 1/2 stalks celery, chopped
- 2 scallions, chopped
- 1 1/2 cup seedless grapes, halved
- 2 cups assorted mixed greens
- 1 large orange, peeled and thinly sliced

Step 1
Walnuts: In a medium saucepan, melt the butter over moderate heat. Add the walnuts and saute for 1 minute. Stir in the honey and cook for about 3 minutes, until the nuts are coated and slightly caramelized. Remove from the heat and cool.
In a large bowl, mix the mayo with the lemon juice and curry powder. Add salt and pepper to taste. Gently stir in the chicken, celery, scallions, and 1/2 the grapes.
Line the bottom of a salad bowl or platter with the greens. Mound the chicken salad in the middle and surround it with the walnuts, orange slices, and remaining grapes.
