Ingredients
- 2 tablespoons oil
- 3 tablespoons chopped garlic
- 2 small sweet onions, chopped
- 2 cups mushrooms, thinly sliced
- 1/2 tablespoon kosher salt
- 1/2 tablespoon pepper
- 2 pounds flank steak (large and thin is best)
- Salt
- Pepper
- 1 package baby spinach
- 9 slices provolone

Step 1
Preheat oven to 350.
Heat one tablespoon oil. Combine garlic, mushrooms, onions, salt and pepper. Cook until moisture is gone and onions are carmelized, 15-20 minutes. Set aside.
Lay flank steak on a cutting board. Spoon onion mixture on top and spread evenly over steak. Sprinkle spinach on top followed by provolone. Roll up firmly, being sure the grain is running horizontally. Use 6 toothpicks to secure; slice into six pieces.
Heat remaining oil. Sear the rolls on each side, then bake for 10 to 15 minutes.
