Ingredients
- 5 lbs. beef cut into 1 1/2 " pieces
- 1 Tbsp. Accent
- 1 Tbsp. salt
- 1/4 tsp. pepper
- 1/2 lb. salt pork
- 2 medium onions, chopped
- 1 clove garlic, minced
- 3 cups dry red wine
- 1 bay leaf 1/4 cup chopped parsley
- 1 tsp. thyme
- 1 lb. mushrooms, drained
- 3 Tbsp. flour

Step 1
Sprinkle beef with combined Accent, salt and pepper.
Cut salt pork into small cubes.
Heat an oven proof casserole or Dutch oven over medium heat. Add salt pork pieces and cook until golden brown.
Add onion and cook until onion is tender.Brown beef. Add pork and beef to casserole. Add garlic, wine, bay leaf, parsley, and thyme.Cover and simmer about 3 hours or until meat is tender.
Add additional wine if necessary.
Add mushrooms during the last 15 minutes of cooking time.
Combine flour with a little cold water to make a smooth paste.
Stir into hot mixture and cook, stirring constantly until mixture is thickened.
Serves: 12
