Ingredients

  • 2 slices of bacon
  • 2 cups chopped onion
  • 1 1/4 cup chopped celery
  • 1/2 tsp salt
  • 1/2 tsp dries thyme
  • 2 cloves of garlic
  • 4 cans of minced clams, undrained
  • 5 cups diced bkaing potato
  • 4 bottles clam juice
  • 3 cups fat-free milk
  • 1/2 cup flour

Preparation

Step 1

cook bacon in large pot over medium heat until crisp. Remove bacon reseving the drippings. Add onion, celery, salt, thyme and garlic to pan and cook 4 minuites or until vegetables are tender.

Drain clams, reserving liquid. Add clam liquid, potato and clam juice. Bring to a boil. Reduce heat and simmer 15 minutes or unitl potato is tender.

Combine milk and flour, stirring with a whisk until smooth. Add flour mixture to pan and bring to a boil. Cook for 12 minutes or until thick, stirring constantly. Add clams and cook for 2 minutes. Sprinkle with bacon.
