Ingredients

  • 2 pkgs. yeast
  • 3 1/4 to 3 1/2 cup sifted flour
  • 1 1/2 cups wheat flour
  • 1/2 cup rye flour
  • 2 cups milk
  • 1/2 cup brown sugar
  • 3 Tbsp. shortening
  • 2 Tbsp. sugar
  • 1 tsp. salt

Preparation

Step 1

Combine yeast, 1 cup flour, wheat flour, and rye flour.
Heat together the milk, brown sugar, shortening, sugar and salt; just until warm, stirring constantly.
Add to dry mixture.
Beat at low speed o;f electric mixer for 1/2 minute, scraping bowl constantly.

Beat 3 minutes at high speed.
Stir in additional 2 1/4 to 2 1/2 cups flour, enough to make a moderately stiff dough.
Turn onto floured surface and knead 8 - 10 minutes.
Place in greased bowl and cover.
Let rise till double about 1 1/2 hours.
Punch down and let rest 10 minutes.
Shape into 2 loaves and place in 2 greased bread pans.
Cover and let rise 45 - 60 minutes.
Bake at 375 degrees for about 40 minutes.


Yield: 2 loaves
