Ingredients

  • 6 small potatoes
  • 4 TBS. melted butter
  • 2 tsp. salt
  • 3 Tbs. grated Parm
  • 1 1/2 cups shredded chesse
  • 4 strips crumbled bacon
  • 3/4 cup sour cream
  • 2 tsp. chives

Preparation

Step 1

Cut slits and microwave until soft. Cut potatoes in half lengthwise and scoop out potato, leaving a thin layer of potato. Brush inside and out with melted butter and sprinkle with parm. Place on lightly greased cookie sheet. Bake 8 minutes or until crisp and bubbly. Fill with cheese and bacon. Bake 5 minutes or until cheese is melted.
