Ingredients

  • 2 packages or 5 tsp. yeast
  • 1/2 cup warm water
  • 1/4 cup shortening
  • 1 3/4 cup warm water
  • 3-4 cups all purpose flour
  • 3 cup whole wheat flour
  • 1/3 cup honey
  • 1/3 cup molasses
  • 1 Tb. salt

Step 1

Dissolve yeast in 1/2 cup warm water in a large mixing bowl. Stir in the honey, molasses, shortening, salt 1 3/4 cup warm water and the whole wheat flour. Beat until smooth. Mix in enough of the all purpose flour to make dough easy to handle. Knead in bread mixer or turn out onto board to knead by hand for about 10 minutes. Place in greased bowl, turn greased side up and cover loosely and let set to raise for about 1 hour or until it has doubled in size. Punch dough down and divide in half. Form into 2 loaves...rolling up tightly and pinching and tucking the ends of each loaf under each end. Grease to loaf pans with Pam and put a loaf of bread into each pan. Cover loosely and let rise. This usually takes about 1 hour. Bake at 375 degrees for 40-45 minutes or until brown on top and sounds hollow if you tap it. Remove from oven and remove from pans to let cool before cutting into slices.

If using this recipe for a bread machine these are the proportions that work best....
1 1/4 cup warm water
1/8 cup shortening
1/4 cup honey
1/4 cup molasses
1/2 Tb. salt
3-4 cup whole wheat flour
3 1/2 cup whole wheat flour
1 Tb. wheat gluten

Add all the liquids first, then add the salt and flour. Make a small hole in the flour and place the yeast and the gluten in that little spot. Start your machine. I usually only use the machine in the "dough mode" for this recipe, then put the dough into regular bread pans to rise again.
Bread making takes time and practice....be patient and good luck.
