Ingredients
- 2 tbs vegetable oil
- 2 tsp finely chopped garlic
- 1 tsp finely chopped fresh ginger1/2 cup thinly sliced carrots
- 1/2 cup sliced onion
- 1/2 cup baby corn (option)
- 16 medium shrimp, peeled and deveined
- 16 sea scallops
- 1/4 pound snow peas, stem ends removed
- 1 tbs sesame oil
- 1-1/2 tb oyster sauce
- 1 pound vermicelli or thin spaghetti cooked in chicken broth
- sliced scallions for garnish

Preparation
Step 1
heat a wok or large saute pan over high heat.
add the oil, garlic, ginger and carrots
stir-fry for 1 minute.
add the onion and corn, if desired and stir for another minute
add the shrimp and scallops and stir for 2 minutes.
add the snow peas , sesameoil and oyster sauce.
stir-fry until the shrimp and scallops are cooked about 5 minutes total
serve over cooked vermicelli and garnish with scallion
