Ingredients

  • 2 tbs vegetable oil
  • 2 tsp finely chopped garlic
  • 1 tsp finely chopped fresh ginger1/2 cup thinly sliced carrots
  • 1/2 cup sliced onion
  • 1/2 cup baby corn (option)
  • 16 medium shrimp, peeled and deveined
  • 16 sea scallops
  • 1/4 pound snow peas, stem ends removed
  • 1 tbs sesame oil
  • 1-1/2 tb oyster sauce
  • 1 pound vermicelli or thin spaghetti cooked in chicken broth
  • sliced scallions for garnish

Preparation

Step 1

heat a wok or large saute pan over high heat.
add the oil, garlic, ginger and carrots
stir-fry for 1 minute.
add the onion and corn, if desired and stir for another minute


add the shrimp and scallops and stir for 2 minutes.
add the snow peas , sesameoil and oyster sauce.
stir-fry until the shrimp and scallops are cooked about 5 minutes total

serve over cooked vermicelli and garnish with scallion
