Whisk 1 1/4 c almond flour, 1/2 tsp salt, 1/2 tsp baking sode. In another bowl beat 1 stick unsalted softened butter with 3/4 c sugar until light and fluffy. Then beat in 1 large egg, 1/2 tsp vanilla until smooth. Then mix in the dry ingredients. Then refrigerate until firm about 30 minutes. Then preheat oven to 350. Line 2 baking sheets with silicone mats or parchment paper. Drop heaping teaspoons of dough about 3 inches apart. Bake until golden and crisp, about 8 minutes. Remove and let cool about 2 minutes. One at a time lift each cookie and wrap around he handle of a wooden spoon to curl. Once it sets, slide it off the handle and let cool on a cooling rack. Serve with mango sorbet. WE TRIED THIS 5/24/10 AND THE BOYS LOVED IT. I MADE THE COOKIES WAY TOO BIG, THEY ALL MELDED TOGETHER. MAKE SURE THEY ARE SMALL AS THEY SPREAD OUT A LOT.
