  • 1 Tablespoon Olive Oil
  • 1 medium onion, chopped
  • 1 large baking potato, peeled and cut into 1-inch chunks
  • 1 pound carrots, peeled
  • 2 cans (14 oz) chicken broth
  • 1 cup milk
  • salt
  • ground pepper

Preparation

Step 1

1. In a large saucepan, heat the olive oil. Add the onion, cover and cook for two minutes. Uncover and cook, stirring, until onion is soft.

3. Add potato, carrots and broth. Bring to a boil, reduce the heat and simmer, partially covered 30 minutes.

4. Puress the soup in blender. Return to pot and stir in milk. Season with salt and papper to taste.
