Ingredients
- Red bliss potatoes 3 lb
- 2 or 3 anchovies
- 2 tbsp Dijon mustard
- 2 tbsp chopped parsley
- 2 tbsp red wine vinegar
- 1 tbsp basil
- EVOO
- salt and pepper
- cornichons 3 or 4 chopped
- 1 tbsp capers

Step 1
Cook potatoes and halve or quarter as needed
in food processor add anchovies,parsley, Dijon mustard, basil, red wine vinegar, and EVOO to make a dressing
place warm potatoes in a bowl and dress
add cornichons and capers
check for salt and pepper
serve warm
