Ingredients

  • 1 head red lettuce
  • 1 cup chopped celery
  • 1 medium onion, sliced (spanish or red)
  • 2 cups frozen peas, blanched
  • 8-10 mushrooms, sliced
  • 1 small can diced water chestnuts
  • 1 cup mayo
  • sprinkle 2 tb sugar
  • 1/2 cup cheddar or parmesan, grated
  • 6 slices bacon, broken up

Preparation

Step 1

1)Layer lettuce, celery, onion, peas, mushrooms, and water chestnuts in a flat salad bowl.

2) Spread mayo and sugar over all layers.

3) Refrigerate at least 4hours covered with saran wrap. Before serving, sprinkle with cheese and bacon.

*Great buffet salad to make a day ahead.
