Your favorite hot sauce can be substituted here but Louisiana Hot Sauce or "Red Dot" is a chilehead staple. The key is to melt butter slowly and keep it emulsified, like a French beurre blanc. A touch of honey gives these wings something extra that keeps people coming back!

  • 1/2 cup Louisiana Hot Sauce
  • 1/4 cup cold butter, diced
  • 1 teaspoon honey

Preparation

Step 1

The Wings
Line a baking sheet with foil, add wings seasoned with salt and pepper, and cook in a 400° oven for 1 hour. Select one of the sauces below, and immediately toss the wings with sauce.

The Sauce
In a small saucepan over low heat, warm the hot sauce and honey gently. Do not boil. When the sauce is just barely warm, turn off the heat, add the diced butter, and stir continuously until the chunks of butter disappear. Immediately toss with crispy wings, and serve.
