Ingredients

  • 2 cans black beans, rinsed
  • small can (7 oz) garbanzo beans
  • 1/2 bunch parsley, stems removed, finely chopped
  • 1/2 bunch scallions, finely chopped
  • 1/2 bunch cilantro, finely chopped
  • 3 tablespoons freshly squeezed lemon juice
  • 3 tablespoons red wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ground cumin
  • 1/4 cup extra virgin olive oil

Preparation

Step 1

PLACE black beans, garbanzo beans, parsley, scallions and cilantro in a large mixing bowl.

COMBINE lemon juice, vinegar, salt, pepper and cumin in a separate bowl. Slowly whisk in the olive oil to emulsify. Pour over the beans and toss gently to combine.
