Vegetarian Black Bean Burger 1 Picture

Ingredients

  • 2 cups cooked black beans
  • 1 cup cooked rice (use medium white rice or short grained brown rice)
  • 1 onion,chopped
  • 2-3 scallions, whites and greens chopped
  • 2-3 garlic cloves, minced
  • 1 tbsp cumin-coriander powder
  • 1 tsp dried oregano (or use fresh if you have on hand – You can use Italian seasoning blend too)
  • generous sprigs of cilantro, chopped (I used like a cup or so, since I love the herb)
  • salt to taste

Preparation

Step 1

Drain the beans of any cooking liquid and mash it well with a potato masher or back of a spoon.

In a skillet with 1-2 tsp oil saute the onions, scallion whites, garlic along with salt and spices. Add dried oregano/Italian seasoning if using now. Saute until soft. Add any heat if you desire – green chillies, Tabasco etc

Add this mixture along with rice to the beans. Mix well until blended together – hands are your best tools for mixing. Add the herbs. You can do a taste test and see if it needs more salt.

Now take a small amount of the mixture and shape into patties.

Grill each patty over hot coals or on a stove top grill until lightly browned on both the sides. I grilled my buns on the side lightly too.

Serve these patties inside the grilled buns topped with cheese slices, onions, tomatoes, greens etc of your choice. While I enjoyed them with just cheese and burgers, My husband preferred it with some red onions slices, double cheese and tomatoes. Very hearty, very filling, very simple and easy and of course – needless to say – immensely nutritious.
