Ingredients
- For the frosting:
- 8 ounces unsalted butter, at room temp.
- 4 ounces brown sugar
- 2 ounces sugar
- 1 ounce honey
- 1 egg
- 1 teaspoon vanilla
- 4 ounces cake flour
- 2 ounces oat flour (or finely ground oats)
- 6 ounces rolled oats, whole
- 2 ounces rolled oats, roughly ground
- 1 1/2 teaspoon baking soda
- 1/2 ?teaspoom salt
- 8 ounces vanilla frosting, recipe below
- 4 ounces unsalted butter, at room temp.
- 4 cups powdered sugar
- 1 teaspoon vanilla
- 1 tablespoon heavy cream

Preparation
Step 1
Preheat an oven to 325.
Cream the butter with the sugars and honey until light and fluffy.
Add the egg and vanilla and mix until completely blended in and the mixture looks emulsified.
Add the flour, oat flour, oats, ground oats, baking soda, and salt. Mix until a dough comes together.
Scoop cookies onto lined baking sheets. Bake for 14-16 minutes, or until golden brown around the edges. Let cool before assembly.
In the meantime, prepare the frosting according to the instructions. Once the cookies are cooled, pipe or spread frosting on the bottom of one cookie. Too with another. Repeat.
Frosting:
Cream all of the ingredients together until light and fluffy.
