Ingredients
- # 1/2 cup nonfat cottage cheese
- # 1/4 cup evaporated skim milk
- # 1/4 cup low-fat ricotta cheese
- # 1/4 cup shredded low-fat monterey jack cheese
- # 1/4 cup grated Parmesan cheese
- # 1 teaspoon minced garlic
- # 5 cups hot cooked egg noodles
- # 2 tablespoons minced fresh parsley

In a blender or food processor, combine the cottage cheese, milk and ricotta; puree. Transfer to a 10" no-stick skillet; add the Monterey Jack, Parmesan and garlic. Cook and stir over medium heat for 3 to 5 minutes, or until the cheeses are melted and the sauce is smooth.

Add the noodles and parsley; stir well.
