Soy-Vinegar Dipping Sauce

This classic condiment is a must-have if you are serving jiaozi (boiled dumplings). It is also a great accompaniment for noodle soups. Make it just before you wish to serve it.

Ingredients

  • 1/2 cup soy sauce
  • 1/4 cup Jinjiang (black rice) vinegar or rice vinegar
  • 2 tablespoons fine ginger shreds (see Note)

Preparation

Step 1

Combine all the ingredients in a bowl and stir. To serve, divide among two or more small condiment bowls and put out a small spoon for each, so guests can dip their dumplings into the sauce or else drizzle it on, to taste.

Notes

NOTE ON GINGER SHREDS: To make the ginger shreds, peel a piece of ginger about 2 inches long and slice lengthwise very thin. Stack the slices and cut into very fine matchsticks.
